Cheese Tortellini Soup with Spinach and Tomatoes

Cheese Tortellini Soup with Spinach and Tomatoes

Cheese tortellini soup cooks filled pasta in a broth with vegetables, then adds spinach near the end. Refrigerated and frozen tortellini have different cooking instructions, so use the package timing and check that the filling is cooked through. Add extra broth if the pasta absorbs more liquid than expected.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 medium carrot cut into small dice
  • 2 garlic cloves finely chopped
  • 1 medium zucchini cut into small pieces
  • 1 can diced tomatoes approximately 14–15 ounces, with juices
  • 4 cups lower-sodium vegetable broth plus up to 1 cup extra as needed
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 9 ounces refrigerated cheese tortellini or a similar package size
  • 2 cups baby spinach
  • Fine salt only after tasting
  • 2 tablespoons grated Parmesan optional for serving

Method

  1. Heat the olive oil in a soup pot over medium heat. Add the onion and carrot and cook for about 5 minutes, stirring, until the onion begins to soften.
  2. Add the garlic and zucchini. Cook for approximately 2 minutes, stirring so the garlic does not scorch.
  3. Add the diced tomatoes with their juices, 4 cups broth, oregano and black pepper. Bring to a gentle simmer and cook for about 8 minutes, or until the carrot and zucchini are approaching your preferred tenderness.
  4. Stir in the tortellini. Follow the package cooking time and directions, keeping the soup at the required gentle boil or simmer. Check the pasta and filling rather than assuming that floating alone proves it is done.
  5. Stir in the spinach during the final 1–2 minutes and let it wilt. Add some of the extra broth if the soup seems too crowded with pasta or too concentrated.
  6. Taste before adding salt. Serve promptly, with a little Parmesan if wanted. The tortellini will continue absorbing liquid as the soup stands.
