  • 4 cups baby potatoes, halved or quartered Cook quickly and hold their shape for roasting.
  • 2 tablespoons olive oil For tossing the potatoes.
  • 1 packet ranch seasoning mix (halal-certified) Gives a tangy, herby flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese Alternatively, use a mix of your favorite cheeses.
  • 1/2 cup sour cream (optional, for serving) For extra creaminess when serving.
  • Fresh parsley, chopped (optional, for garnish)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half or quarters for even cooking.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, mix the ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large bowl, drizzle the halved potatoes with olive oil and sprinkle with half of the ranch seasoning mix. Toss well to coat.
  6. Line a baking sheet with parchment paper or lightly grease it.
Cooking
  1. Spread the seasoned potatoes in a single layer on the baking sheet.
  2. Scatter the sliced smoked sausage over the potatoes.
  3. Roast for 35-40 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
  4. Once roasted, sprinkle cheddar cheese over the dish and return to the oven for another 5 minutes to let the cheese melt.
  5. Remove from the oven, garnish with fresh parsley, and serve hot with sour cream if desired.

Notes

To get extra crispy potatoes, space them out on the baking sheet. You can customize with your favorite vegetables. Adjust the amount of ranch seasoning to taste. For a spicy kick, try adding sliced jalapeños or using pepper jack cheese.
