Main Ingredients
  • 1 cup low-fat cottage cheese Use full or low-fat cottage cheese to suit your taste.
  • 4 slices crusty Italian bread Use day-old bread for better toasting.
  • 1/2 cup chopped strawberries Fresh or thawed frozen strawberries can be used.
  • 1/2 cup blackberries, halved Can be replaced with frozen berries after thawing.
  • 4 tablespoons honey Use more or less to taste.

Method
 

Preparation
  1. Place cottage cheese into the bowl of a food processor or blender. Blend until smooth, about 1 minute, scraping down the sides after 30 seconds.
  2. Toast bread slices.
Assembly
  1. Top each slice with 1/4 cup cottage cheese, then top with 1/4 cup mixed berries.
  2. Drizzle each slice with 1 tablespoon honey, or more to taste.

Notes

Serve the toast warm or at room temperature. Add extra honey or a sprinkle of cinnamon if you like. For a savory meal to pair, enjoy with chicken chimichangas. Store leftover cottage cheese mix in the fridge for up to 3 days and toast fresh bread when ready to eat.
