Creamy Garlic Parmesan Chicken Pasta

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil
  • 12 oz penne pasta
  • 4 tbsp unsalted butter
  • 6 fresh garlic cloves minced
  • 1.5 cups heavy cream
  • 1.25 cups freshly grated Parmesan cheese
  • 2 tbsp fresh parsley chopped
  • Salt and black pepper to taste

Method
 

  1. Pat chicken breasts dry and season both sides with Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  2. Boil penne pasta in salted water until al dente. Reserve half a cup of pasta water, then drain.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4 to 5 minutes per side until golden brown, then slice.
  4. Melt butter in the skillet, saute minced garlic for 60 seconds, then simmer heavy cream for 3 minutes.
  5. Whisk in freshly grated Parmesan over low heat until smooth.
  6. Fold in cooked pasta, top with sliced chicken, and garnish with fresh parsley.
