Main Ingredients
  • 1 lb ground pork
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 bag (14 oz) coleslaw mix Pre-packaged for convenience
  • 3-4 green onions, sliced
  • 3 tablespoons soy sauce Can substitute with gluten-free tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha Optional for heat
For Topping
  • sesame seeds
  • extra sliced green onions
  • lime wedges

Method
 

Cooking
  1. Heat the sesame oil in a large skillet over medium-high heat.
  2. Add the ground pork and cook for 5-7 minutes, breaking it up with a wooden spoon until nicely browned.
  3. Once cooked through, add the minced ginger and garlic and stir constantly for about 1 minute until fragrant.
  4. Dump in the entire bag of coleslaw mix and stir everything together. Cook for 5-6 minutes until the cabbage is tender but still has a bit of crunch.
  5. Pour in the soy sauce, rice vinegar, and sriracha if using. Toss everything together and cook for another 2 minutes to let the flavors meld.
  6. Remove from heat and stir in most of the green onions, saving some for garnish.
  7. Divide among plates, top with sesame seeds and the remaining green onions, and serve with lime wedges on the side.

Notes

This recipe is versatile; you can substitute the ground pork with chicken, turkey, or beef. Adding vegetables like water chestnuts, mushrooms, or bell peppers can enhance the flavor and texture.
