- Heat the sesame oil in a large skillet over medium-high heat.
- Add the ground pork and cook for 5-7 minutes, breaking it up with a wooden spoon until nicely browned.
- Once cooked through, add the minced ginger and garlic and stir constantly for about 1 minute until fragrant.
- Dump in the entire bag of coleslaw mix and stir everything together. Cook for 5-6 minutes until the cabbage is tender but still has a bit of crunch.
- Pour in the soy sauce, rice vinegar, and sriracha if using. Toss everything together and cook for another 2 minutes to let the flavors meld.
- Remove from heat and stir in most of the green onions, saving some for garnish.
- Divide among plates, top with sesame seeds and the remaining green onions, and serve with lime wedges on the side.

This recipe is versatile; you can substitute the ground pork with chicken, turkey, or beef. Adding vegetables like water chestnuts, mushrooms, or bell peppers can enhance the flavor and texture.
