  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese divided
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft (about 5 minutes).
  3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  4. Shape the mixture into a loaf form in the greased baking dish.
  5. Sprinkle remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning for extra flavor.
Cooking
  1. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.
Serving
  1. Slice the meatloaf and serve warm with steamed vegetables, mashed potatoes, or a simple salad.

Notes

Do not overmix the meat to keep the loaf tender. Sautéing onions first adds more flavor and removes excess moisture. Use low-sodium soy sauce to control salt. Allow the loaf to rest for 10 minutes before slicing to maintain shape. Always check the internal temperature with a meat thermometer for safety.
