  • 1 tablespoon unflavored gelatin powder choose beef-derived gelatin if avoiding pork
  • 1/2 cup hot water very hot, not boiling
  • 1/2 cup cold water, unsweetened juice, or herbal tea
  • lemon juice, apple cider vinegar, or natural sweetener optional, to taste; stevia or monk fruit work well

Method
 

  1. Add the unflavored gelatin to the hot water and stir until completely dissolved and smooth.
  2. Pour in the cold water, unsweetened juice, or herbal tea. Stir well, then add any optional lemon juice, apple cider vinegar, or natural sweetener to taste.
  3. For a drinkable version, enjoy the mixture right away before it starts to set.
  4. For a chilled snack, pour the mixture into a small dish or mold and refrigerate for 2 to 3 hours until firm.
  5. Serve as a light snack or have it about 15 to 30 minutes before a meal.

Notes

Try green tea with lemon or a cranberry-lime variation for extra flavor. This recipe can be prepped ahead and stored in the refrigerator for the week. For a MEAT-free version, use beef-derived gelatin. For a vegetarian alternative, use agar-agar, keeping in mind the texture will be different.
