High Protein Gelatin Power Cubes

Ingredients
  

Base
  • 1/2 cup cold tart cherry juice for blooming the gelatin
  • 1 1/2 cups tart cherry juice heated until hot but not boiling
  • 4 tablespoons grass-fed unflavored gelatin powder
  • 2 scoops whey protein isolate vanilla or unflavored
  • 1 tablespoon monk fruit sweetener or preferred low-carb sweetener, to taste
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon zest optional
  • 1 pinch sea salt optional

Method
 

  1. Pour the cold tart cherry juice into a mixing bowl. Sprinkle the gelatin evenly over the surface and let it bloom for 5 to 10 minutes until thick and sponge-like.
  2. Heat the remaining tart cherry juice in a small saucepan until hot but not boiling.
  3. Pour the hot juice over the bloomed gelatin and whisk until completely dissolved and smooth.
  4. Add the whey protein isolate, sweetener, vanilla extract, lemon zest, and sea salt. Whisk vigorously until fully combined and no lumps remain.
  5. Skim off any surface foam for clearer cubes. For an extra even texture, whisk the mixture over a cool bowl or ice bath for 1 to 2 minutes until it begins to thicken slightly.
  6. Pour the mixture into silicone molds or a lightly greased glass baking dish.
  7. Refrigerate for at least 4 hours, or preferably overnight, until the cubes are fully set and firm.
  8. Unmold or cut into 24 cubes. Store in an airtight container in the refrigerator for up to 5 to 7 days.

Notes

For a Berry Blast variation, replace part of the juice with 1/2 cup raspberry or blueberry puree. For a creamy tropical version, use full-fat coconut milk and vanilla whey protein for a panna-cotta-like texture. Do not use fresh pineapple, kiwi, or papaya unless heated first, as natural enzymes in those fruits can prevent the gelatin from setting. Freezing is not recommended because the cubes may become watery after thawing.
To make the cubes more complete nutritionally, a secondary protein source such as whey isolate is used alongside gelatin, which is not a complete protein on its own.
