Ingredients
  

Gelatin Base
  • 3 tbsp unflavored gelatin powder
  • 2 cups water or unsweetened milk of choice Use coconut milk for a dairy-free version.
  • 2 scoops unflavored or vanilla protein powder Whey, plant-based protein, or collagen peptides can be used.
  • 2 tbsp honey or maple syrup Use a monk fruit or stevia blend for a lower-sugar version.
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice Optional; add for a bright citrus flavor.
  • 1 pinch sea salt Optional.
  • 1/2 cup fresh or freeze-dried fruit Optional; berries work especially well.

Method
 

  1. Bloom the gelatin: Pour about 1/2 cup of the cool liquid into a small bowl. Sprinkle the unflavored gelatin evenly over the surface and let it stand for 3–5 minutes, until softened and swollen.
  2. Warm the remaining liquid: Add the remaining 1 1/2 cups of liquid to a small saucepan and warm gently over low to medium heat. Do not let it boil.
  3. Dissolve the gelatin: Add the bloomed gelatin to the warm liquid and whisk until completely dissolved and smooth.
  4. Add the protein and flavorings: Remove the saucepan from the heat and allow the mixture to cool slightly. Whisk in the protein powder, honey or maple syrup, vanilla extract, lemon juice if using, and sea salt until smooth and lump-free. Avoid adding protein powder to very hot liquid because it may clump.
  5. Add optional fruit: Gently fold in fresh or freeze-dried fruit if desired.
  6. Pour and chill: Line an 8-inch square baking dish with parchment paper or use silicone molds. Pour in the mixture and refrigerate for at least 2–4 hours, or until fully firm.
  7. Cut and serve: Remove the set gelatin from the dish and cut it into bite-sized cubes. Serve chilled.

Notes

For the best texture, never boil the gelatin mixture after adding the gelatin. Blooming the gelatin first helps prevent clumps and creates evenly set cubes. Let the mixture cool slightly before adding protein powder to reduce the chance of seizing or clumping.
For flavor variations, try berries, lemon zest and juice, cinnamon, or a small spoonful of nut butter. Store the finished cubes in an airtight container in the refrigerator for up to 5 days. For a sugar-free version, use an unsweetened protein powder and a zero-calorie sweetener.
Collagen peptides can be substituted for protein powder, while whey or plant-based protein powders can also be used. Texture may vary depending on the protein source.
