Ingredients
  

Wet Ingredients
  • 6 large large eggs
  • ½ cup full-fat Greek yogurt Provides creaminess and moisture.
  • ¼ cup melted butter or coconut oil Adds rich flavor.
Dry Ingredients
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon xanthan gum or psyllium husk powder Helps the bread maintain its shape.
  • ½ cup finely ground almond flour Provides additional structure.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a loaf pan with butter or line it with parchment paper.
Mix Wet Ingredients
  1. In a large bowl, crack the eggs and whisk until frothy and pale yellow. Add Greek yogurt and melted butter or coconut oil, then mix until combined.
Incorporate Dry Ingredients
  1. In a separate bowl, sift together baking powder, salt, and xanthan gum. Slowly mix this into the wet ingredients until you have a thick, smooth batter.
Fill and Smooth the Pan
  1. Pour the batter into the prepared loaf pan, using a spatula to smooth the top.
Bake and Cool
  1. Bake for 35–40 minutes until the top is golden brown. A toothpick inserted in the center should come out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days or freeze for up to three months. Toast from frozen if desired.
