Preparing the Chicken
- Pat the chicken breasts dry with paper towels and season with salt, pepper, and paprika.
- Combine minced garlic, honey, and juice from one lime in a small bowl for the marinade. Marinate the chicken for 15-30 minutes if time allows.
- Heat olive oil in a large skillet over medium-high heat. Add chicken to the pan and cook undisturbed for 6-7 minutes until golden-brown.
- Flip the chicken and cook for another 6-7 minutes, brushing with the honey-lime mixture during the last minute.
- Let the chicken rest for a few minutes before slicing.
Creating the Lime Sauce
- Whisk together lime juice, olive oil, honey, minced garlic, salt, and pepper. Adjust seasoning as desired.
Building the Rice Stack
- Prepare the rice and fold in some lime sauce and fresh cilantro.
- Layer the rice on a plate, or use a ring mold for a more impressive presentation.
- Slice avocados into thin, even slices and arrange over the rice stack.
Assembling Your Masterpiece
- On each plate, create a rice stack and top with sliced avocado and the honey lime chicken breast.
- Drizzle the lime sauce around the base, garnish with fresh cilantro, and lime wheels.
Notes
For perfect chicken, ensure it's dry before cooking. Don’t press the chicken while cooking to keep it juicy. Assemble before serving to maintain freshness.
