Creamy Shrimp Cheese Rolls

Ingredients
  

  • 7 oz shrimp, peeled and deveined
  • 7 oz cream cheese, softened
  • 1⅔ oz mozzarella cheese, shredded
  • 2 chives, finely chopped
  • 4 spring roll wrappers
  • 1 egg, beaten
  • 1 tbsp sesame oil
  • salt to taste
  • oil for frying

Method
 

  1. Heat sesame oil in a pan over medium heat. Add shrimp and salt. Cook for 2–3 minutes until pink and fully cooked. Remove and let cool, then chop into small pieces.
  2. In a bowl, combine cooked shrimp, cream cheese, mozzarella, and chives. Mix until evenly combined.
  3. Place a wrapper flat. Add filling near the bottom corner. Fold bottom corner over filling, fold sides inward, and roll tightly. Seal with beaten egg.
  4. Heat oil to 350°F (175°C). Fry rolls for 2–3 minutes per side until golden brown and crispy. Drain on paper towel and serve immediately.

Notes

Air fry at 375°F (190°C) for 8–10 minutes, flipping halfway. For oven baking, cook at 400°F (200°C) for 12–15 minutes and brush lightly with oil for extra crispiness. Always use hot oil (350°F / 175°C) when frying and avoid overfilling to prevent soggy rolls. Store refrigerated up to 3 days or freeze up to 2 months.
